Recipe: chocolate mousse with CBD

CBD-infused chocolate mousse

Kitchen utensils
- 8 ramekins
- 1 whisk
- 2 medium-sized bowls
- 2 small bowls
- 1 small-mesh strainer
- 1 saucepan
- 1 spatula
- 1 measuring glass
- plastic film
Ingredients
- 250g pastry chocolate, finely chopped
- 5 eggs
- 70g sugar
- 5g salt
- 200g whipped cream
- 90 cL milk
- 1 tablespoon vanilla extract
- 1/2 teaspoon instant coffee powder
- 300mg CBD crystals
Instructions
- Put the baking chocolate in a box. You'll be putting your hot ingredients in it, so make sure your bowl holds the heat. Place the colander over your bowl and set aside.
- Separate egg whites and yolks into two separate bowls. Cover and reserve the whites for later.
- Whisk egg yolks, sugar and salt in a new bowl until incorporated. Slowly add the milk and whipping cream. Whisk gently until you obtain a showery texture, without too many air bubbles in the mixture.
- Place the mixture in the saucepan and heat over medium heat, stirring constantly with the spatula. The cream should thicken slowly after 8 to 12 minutes of constant stirring. Your cream is ready when your spatula sits upright in the pan.
- Immediately pour the mixture into the strainer. This retains any lumps of milk that may have formed during cooking.
- Add the CBD to the cream and chocolate, and stir until smooth.
- Add the vanilla and coffee powder before separating into the ramekins. You can gently tap the side of the ramekin to remove any air bubbles that may have formed.
- Leave your chocolate mousse to cool to room temperature, then cover with cling film and set aside for 4 hours.
- Serve cold.
