Cirrus: the CBD cake from Philippe Conticini x FrenchFarm.ac
«Here, all is order and beauty, luxury, calm, and pleasure.» Although Baudelaire wrote these lines for *Les Fleurs du Mal*, they could just as easily apply to the Cirrus, a creation born of the genius of the House of Philippe Conticini and FrenchFarm.ac.
This flavor profile, which combines citrus with the herbal taste of CBD, reflects Chef Philippe Conticini’s boldness and creativity.
«Ever since I started in this profession, my work has always been driven by at least four feelings that are deeply rooted within me: a love of good food, the perpetual quest for flavor, the ceaseless search for emotion, and curiosity. This has allowed me to constantly create and innovate, as I did in the mid-1990s, when I had the idea of combining ingredients like tobacco, Coca-Cola, celery, chicory, or black radish—ingredients that had been completely overlooked in pastry-making until then.».
Having had the opportunity to try CBD, so it was only natural that the chef came up with a cake that included it.
«By incorporating CBD into my pastries, I sought first and foremost to highlight the herbaceous flavor of this product. I found it interesting to explore these particularly intense herbal notes and the resulting bitterness, and to pair them with citrus fruits. And if, on top of that, one might experience, an hour or two after tasting this cake, a sense of well-being, calm, and relaxation, then so much the better. Especially in these current times of stress and uncertainty. But that wasn’t the primary goal when I created this cake, because, »no matter what’s on my mind, the only thing that matters to me is the urgent need to offer as many people as possible the greatest amount of pleasure and emotion through careful thought and meticulous work on flavor,” the chef explains.
